Eating Well!

Tuesday, April 17th - Second grill cooked meal for me: thawed out Monday night some chicken thighs so they’d be ready to cook for tonight’s dinner. Did discover that one drawback of inexpensive barbeque grills is how close the grill is to the coals and that no level changer is available. Bummer! But, otherwise, this little ole grill isn’t bad and all I had to do was move the chicken pieces from directly over the coals for the majority of their cooking.
My first attempt at replicating Mary Ann’s delicious grilled potatoes on my little toaster oven (this thing is really coming in handy!) wasn’t bad. I know I am missing some spice, but they tasted pretty darn close and were good. Adding my favorite vegetable, peas, capped it off.

Oh my god. Dad, I am happy that you are having fun updating us, but seriously. No seriously. Bummer? Great pics. Are you actually going a little stir crazy in the new digs? I will buy you a fish to talk to.
